I go this route too. I'd recommend testing though rather than unstable.
It is kept up-to-date and is usually very clean because of Debian's
Testing policy. (http://www.debian.org/devel/testing)

Having said that, I use unstable at home and have come up on some
issues, but nothing that isn't fixed or figured out in a day or two.
There was a little bug in tzdata that killed the upgrade a little while
ago, but manually installing the package with dpkg and then continuing
the apt-get update fixed that.

If you're confident enough to be able to figure things out, maybe edit
the occasional pre/postinst script, you'll shouldn't have to worry too much.
