If thats all you want to do, ditch sieves shell.

cp new.sieve.script /var/spool/cyrus/sieve/s/stevenkurylo/default.script
/usr/lib/cyrus/bin/sievec
/var/spool/cyrus/sieve/s/stevenkurylo/default.script
/var/spool/cyrus/sieve/s/stevenkurylo/default.bc
chown cyrus.mail /var/spool/cyrus/sieve/s/stevenkurylo/*

In my case the symlink defaultbc -> default.bc is already there. Of
course you might have an older version, in which case things might be
a bit different.

I don't know why the shell is ignoring your realm.
