Then I don't understand your question.

Download the the source from kernel.org, compile it however you want,
place it were ever you want, and adjust whatever boot loader you
please to launch it.

If you don't include something like udev, there might be problems.

apt-get install sysvinit

You'll lose the Ubuntu meta-packages, so you won't have a functioning
dist-upgrade unless you reinstall them before hand.
