x264 is fairly intensive to encode, but when put in a quicktime
container (.mov) it should play on any recent Mac install. This is
likely your best option for quality, although possibly not for speed of
encoding.

Other suggestion would be to use whatever you want, and just bundle VLC
with the movie, since it's available for every platform and plays
everything. ;)
