For starters there's the spiffy new Gnome Control Center:
http://lunapark6.com/?p=2728
As part of the pending Gnome 2.18

libgimme: "libgimme-codec is a library that can be called on for
automatic installation
of media codecs by a distribution-specific helper script." which is to
say that when Feisty comes out and you double-click on an MP3, while
still not playing out-of-the-box, it will offer to make it work :)

Linux kernel 2.6.20

new metapackage "ubuntu-restricted-extras" to automatically install
packages from multiverse: codecs, flash, MS fonts and java; it
currently installs jre 5 and I've filed a bug on that because...

Sun's Java RE 6 is available! :) see
http://ubuntuforums.org/showthread.php?t=262603 and
http://ubuntuforums.org/showthread.php?t=326924 for details on what it
can do/do better.

Flegita is a Gnome versions of Xsane

Marble is a cute little KDE globe program: "It shows the earth as a
sphere but doesn't make use of any hardware acceleration (NO OpenGL)."

All that and lots of misc fixes, under the hood improvements and
latest versions of various software in addition to the stuff i forgot
about ;)
