1. Create the mailbox on the new server.
2. Adjust the LDAP entry to point to the new server.
3. Copy mail over in the background.
If you're worried about the user accessing the mailbox before it's fully
repopulated with old mail, all the old mail, you just need to disable
POP and IMAP logins, either by changing the password, or by having an
LDAP flag for that purpose.

Well, with sendmail it's fairly definitive, because it's a built-in
feature. In my case, though, I did actually end up writing my own set
of custom sendmail rules, specific to my environment.
