What's the ubuntu way?

So I change my monitor to a bigger one, and thus want to set my
resolution higher.
In ubuntu, under System/preferences, when I try to change the screen
resolution, it only shows options equal to or smaller than what I was
using till now. The video card is capable of much more.

In my purely debian days, I'd just hand edit the XF86config files to my
liking. I'm guessing the ubuntu is different. Any quick hints? I'm just
trying to go from 1024x768 to 1280x1024.
